Cabbage Salad

INGREDIENTS

  • 2 tablespoons vegetable oil

  • 2 tablespoons cider vinegar

  • 2 tablespoons white wine vinegar

  • 2 teaspoons dijon mustard

  • 2 teaspoons sugar

  • 1/4 teaspoon celery seeds

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 clove garlic, minced

  • 6 cups cabbage, shredded

  • 1 cup carrots, shredded

  • 1 cup green pepper, diced

  • 2 green onions, chopped fine


In a large bowl, whisk together oil, vinegars, mustard, sugar, celery seeds, salt, pepper and garlic. Add cabbage, carrot, pepper and green onions. toss to coat. Let stand 15 minutes before serving.


Cover and refrigerate for up to one week.
