Cauliflower Nachos

INGREDIENTS

  • 1 medium cauliflower, cut into pieces

  • 2 teaspoons olive oil

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon chili powder

  • 1/4 teaspoon garlic powder

  • 1/2 cup shredded cheese

  • 1/4 cup tomato

  • 1/4 cup red onion

  • 1/4 cup bell pepper

  • 1-2 medium hot peppers

  • 1/2 cup mashed avocado

  • 2 tablespoons finely chopped cilantro


Preheat oven to 425 degrees.


Place cauliflower on baking sheet. Drizzle with oil. Sprinkle with cumin, salt, chili powder, garlic powder. Toss gently to blend.


Bake 30 minutes until tender crisp and golden. top with cheese. Bake for another 3-5 minutes. Top with tomato, onion, pepper, hot pepper, avocado and cilantro.Serve immediately.
