Cauliflower-Potato Curry

INGREDIENTS

  • 1 cauliflower head

  • 2-3 potatoes

  • 1/2 cup peas

  • 1/4 cup oil

  • 1/2 to 1 teaspoon coriander seeds

  • 1 to 2 teaspoon cumin seeds

  • 2 to 3 tablespoon ginger, shredded

  • 2 tablespoon green chilies, diced

  • 1/2 teaspoon turmeric

  • dash of salt

  • 1 cup hot water

  • 2 teaspoon lemon juice

  • 1 to 2 tablespoons cilantro

  • 3 to 4 tablespoons plain yogurt


Wash and cut your vegetables. Heat the oil in a  heavy skillet. Add the coriander and cumin seeds. Fry until brown. Add the ginger, green chilies, turmeric and salt. Blend flavours. Add the potatoes and cook until tender (add 1/2 cup hot water and cover to steam the potatoes if they are sticking to the pan)


Add the cauliflower and stir in the rest of the hot water. Cook until tender. Add the peas and cook a few minutes more. Remove from heat and add the lemon juice and cilantro.


Serve with dollops of yogurt.
