Colcannon

INGREDIENTS

  • 4 potatoes (~2 lbs.), peeled and cut into large chunks

  • salt

  • 5-6 tablespoons unsalted butter

  • 3 cups cabbage, chopped (You may also substitute kale, chard or other leafy green)

  • 3 green onions, minced

  • 1 cup milk or cream


Boil the potatoes in salted water until they are fork tender, 15-20 minutes. Drain in a colander. Return the pot to the stove over medium heat to melt the butter. Then add the cabbage (or other greens). Cook 3-4 minutes, or until they have wilted and given off some of their juices.


Add the green onions and cook one more minute. Pour in the milk or cream, mix well and then add the potatoes. Reduce the heat and mash the potatoes, mixing them up with the greens. Add salt and pepper to taste.


Serve hot, with a pat of butter in the center.
