1 tablespoon butter
2 cups corn
2-3 garlic cloves, minced
2/3 cup red pepper, diced
2/3 cups green pepper, diced
2/3 cups red onion, chopped
1 hot pepper, chopped
1 tablespoon cilantro, chopped fine
2/3 cup heavy cream
1/3 teaspoon salt
2/3 cup cheddar cheese
2/3 cup monterey jack cheese
Preheat oven to 325 degrees.
Saute the corn, garlic, peppers and onion in butter. Add the cilantro and remove from the heat. Whisk together the eggs, cream and salt.
Mix the veggies with the eggs and cheeses.
Spoon mixture into greased muffin tins, 2/3 full.
Bake until set and slightly browned. Makes 1-1/2 dozen.
