INGREDIENTS
vegetable oil, as needed
3/4 cup cornmeal
1/2 cup flour
2 teaspoons baking powder
salt & pepper, to taste
1/2 teaspoon sugar
3/4 cup milk, plus more if needed
1 egg
2 cups fresh corn kernels
In a deep saucepan, add vegetable oil to a depth of approx. 3 inches.
Heat over medium high while preparing the fritters. Also, preheat oven to 200 degrees.
In a large bowl, combine the dry ingredients. Beat together the milk and the egg, then pour into the dry, adding more milk if necessary to make a thick but smooth batter. Stir in the corn.
Drop the fritters by a large spoonful (around 1/4 cup) into the hot oil. Raise the heat to maintain a fairly consistent temperature. Cook fritters in batches, turning once until they are nicely browned, 4-5 minutes per batch. Drain the fritters.
Keep them warm in the oven until ready to eat. Serve the fritters with maple syrup, salsa or aioli sauce.
