This is a standard recipe that can be used with any vegetable.
Suggested vegetables: broccoli, cauliflower, spinach, chard, celery.

1/4 cup butter
1-1/4 cup onion, diced
4 cups vegetables, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups water
1-1/2 cups half-and-half
1/4 bunch green onions, diced
2 tablespoons fresh parsley
Saute the onions in butter until soft. Add vegetables.
When the vegetables are soft, stir in flour, salt, pepper, garlic powder and onion powder to make a roux with the butter/veggie mixture.
Stir in half-and-half and allow to thicken a bit to make a sauce. Then add water and keep stirring until a soup consistency forms. Simmer to allow flavours to blend and deepen.
Add other herbs and spices as desired.
To serve, garnish with green onions and parsley.
