1 lb. kale
1/4 cup olive oil
1/4 cup thinly sliced garlic (~5-6 cloves)
1 teaspoon minced garlic
1/2 teaspoon crushed red pepper flakes
salt & pepper, to taste
1/2 cup broth or waterlemon wedges
Coarsely chop the kale leaves, removing any large stems or ribs. Place the olive oil in a large, deep saucepan. Add the sliced garlic, red pepper flakes, salt and black pepper and cook for one minute over medium-high heat.
Add the kale and the liquid. Cover and cook over medium heat for around 5 minutes, or until the greens are wilted and tender firm. Uncover and continue to cook until the liquid has nearly evaporated and the greens are tender. Taste for seasoning and adjust as desired.
Finally, add the minced garlic and cook for one minute more.
Serve with lemon wedges. (If desired, substitute minced ginger for minced garlic in final step)
