Egg and Potato Frittata



Prep time: 10 min   |    Cook time: 50 min   |   Ready In: 60 min

INGREDIENTS

  • 1 large potato, sliced

  • 1 onion, chopped

  • 1/4 cup green pepper, chopped

  • 1/4 teaspoon pepper

  • 1/2 teaspoon salt

  • 6 eggs

  • 1 cup shredded cheddar cheese

  • 1 cup milk

  • 1/4 cup flour

  • 1/4 teaspoon baking powder

  • 2 tablespoons butter, melted

Preheat oven to 325 degrees. Saute the potato with the onions and peppers, add salt & pepper.


In a bowl, beat the eggs; add the cheese, milk, flour, baking powder and melted butter. Spoon sauted vegetables into a greased baking dish (8-by-8-inch).


Pour egg mixture over top. Sprinkle with paprika and parsley.


Bake 40-50 minutes.


Serves 4-5 people.**Try adding red pepper, zucchini, or summer squash to the vegetable mix
