INGREDIENTS
2 cups canned diced tomatoes
2 cups stock or water
5 tablespoons onion, chopped
1-1/4 cups fresh tomatoes, diced
1/2 cup green pepper, minced
1 cup cucumber, diced
1 cup green onion, chopped fine
3/4 teaspoon garlic, minced
2 tablespoons fresh parsley, finely chopped
2 tablespoons lemon juice
2 teaspoons wine vinegar
2 teaspoons olive oil
3/4 teaspoon honey
3/4 teaspoon basil
3/4 teaspoon tarragon
1/4 teaspoon cumin
1/4 teaspoon lemon pepper
3/4 teaspoon salt
dash of cayenne
Blend canned tomatoes, stock or water and onion in a blender. Combine the rest of the ingredients with the blended mixture.
Chill for 2 hours. Serve with avocado slices and crusty bread.
