Green Bean Pesto

  • 1/2 lb. fresh green beans, trimmed

  • 1 cup firmly packed basil leaves

  • 1 cup pitted green olives

  • 1/2 cup toasted almonds or pine nuts

  • 1 cup olive oil

Bring a large pot of salted water to a boil. Add beans and cook for 3 minutes.

Using a slotted spoon, transfer beans to a large bowl of ice water; cool.

Drain and dry the beans. Put into a food processor with basil, olives, and nuts.

Process until finely chopped. With machine running, slowly add the olive oil.

Store in the refrigerator, covered, for up to one week.
