1 cup dried small shell macaroni, ditalini, etc.
3/4 lb. fresh green beans, trimmed and cut into 1/4 inch pieces
1 cup green bean pesto
1/2 cup parmesan cheese, grated
2 cups romaine lettuce, chopped into 1/2 inch pieces
salt & pepper, to taste
Cook the pasta in boiling water. After 6 minutes, add the beans. Continue cooking until the pasta is al dente, around another 4 minutes.
Remove from heat and drain, reserving 1 cup of the cooking water. Return pasta and beans to pot.
Add the green bean pesto, cheese and reserved cooking liquid; stir until coated. Add the lettuce and toss to combine.
Season to taste with salt and pepper. Serve.
