1 cup chopped kale stems (or other neglected vegetable stems)
1/2 cup parsley, with stems
1/2 cup toasted walnuts
3 garlic cloves
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
zest of one lemon
juice of 1/2 lemon
1/4 to 1/2 cup olive oil
Add all the ingredients, except the oil into a food processor. Pulse until the mixture is crumbly, scraping the sides with a spatula as needed. Continue pulsing, steadily adding the oil until well blended. Process to your own liking.
Use on pizza, pasta, sandwiches, soups, etc.
