Marinated Vegetables



Prep time: 20 min   |    Cook time: 120 min   |   Ready In: 140 min

INGREDIENTS

  • 1/2 head of broccoli

  • 1/2 head of cauliflower

  • 3/4 cup green pepper, sliced

  • 1/4 lb. carrots

  • 1/4 lb. cherry tomatoes

  • 1/2 cup artichoke hearts

  • 1/2 cup black olives

Marinade:

  • 3/4 cup olive oil

  • 1/2 cup tamari

  • 2 teaspoons vinegar

  • 2 tablespoons honey

  • 1-3 garlic cloves, minced

  • 1 teaspoon each friend oregano, basil, mustard, salt & pepper

Wash and prepare the vegetables into slices and wedges.


Lightly steam the broccoli, cauliflower and carrots until they just begin to change colour.


Remove from heat and submerge in cold water to stop the cooking process; drain.


Mix up the marinade. Then, combine all the vegetables together, toss with the marinade and let sit, stirring occasionally.
