3/4 cup olive oil

6-8 garlic cloves

2 cups, basil leaves, packed

1 cup parsley leaves, packed

1/2 cup thyme leaves, packed

1/2 cup walnuts or pine nuts

1/4 teaspoon salt

pepper, to taste

1/2 cup parmesan cheese, grated

In a blender or food processor combine 1/4 cup oil, garlic and 1/2 cup basil leaves. Blend, stirring if needed. Add more fresh basil and blend again, turing the leaves into a paste. Gradually blend the remaining basil, parsley and thyme. Then, add the nuts, salt, pepper, remaining oil and cheese. Blend until smooth.
