Potato Leek Soup

  • 1/4 cup olive oil

  • 1-1/4 cup leeks

  • 1 celery stalk

  • 5 potatoes, peeled and diced

  • 3 cups water

  • 2 cups milk

  • 3/4 teaspoon salt

  • 1 teaspoon pepper

  • 3/4 teaspoon parsley

  • 3/4 teaspoon dill

Sauté celery in the olive oil until almost soft. Add leeks and cook for one minute. Add water and potatoes, then cover and simmer over medium heat until potatoes are tender. Add the milk and the seasonings. Heat through.

Blend half the mixture in a blender until smooth. Add back to the remaining soup. Serve warm. Makes 4-6 servings.

Optional additions include cheddar or jack cheese or crumbled bacon for a hearty flavour.
