INGREDIENTS
1/2 cup oil
2/3 cup honey
1/2 teaspoon vanilla
2 eggs
1 cup pumpkin, pureed
3-1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
2/3 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 cup walnuts, coarsely chopped
1/2 cup water or milk
Preheat oven to 325 degrees.
Season muffin tins by oiling the cups and baking for 10 minutes. Let cool. Meanwhile, in a large bowl, mix together oil, honey and vanilla together. Add eggs, one at a time while beating. Mix in pumpkin and nuts. Combine dry ingredients in a separate bowl and stir into pumpkin mix, alternating with water or milk. Do not over beat. Spoon batter into prepared muffin tins, about 2/3 full.
Bake for 30-35 minutes. Makes approx. 2 dozen.
