Pureed Rutabaga



Prep time: 10 min   |    Cook time: 30 min   |   Ready In: 40 min

INGREDIENTS

  • 1-1/2 lbs. rutabaga, peeled and cut into chunks

  • 1 or 2 medium potatoes, peeled and cut into chunks

  • 2 tablespoons butter or olive oil

  • salt & pepper, to taste

  • minced fresh parsley

Bring a large pot of water to a boil; salt it.


Add the turnips and potatoes and turn the heat to medium. Cook until the vegetables are very tender, around 20-30 minutes.


Drain well and place in a food processor. Add the butter and process or mix until smooth.

Taste and adjust seasoning, garnish and serve.
