1/4 cup olive oil
1/4 shallot, minced
2 garlic cloves, minced
1/4 cup cider vinegar
2 teaspoons honey
1/4 cup pecans, toasted and chopped
salt & pepper, to taste
2 beets (chioggia or any other variety), peeled & thinly sliced
2 cups beet greens, stems removed & thinly sliced
feta cheese, to taste
Prepare the dressing by combining the oil, shallot and garlic in a small saucepan over medium heat. Cook approx. 5 minutes, until fragrant.
Whisk in the vinegar and honey until blended completely, then add the pecans, salt & pepper. Stir to combine and keep warm.
In a large serving bowl, toss together the beets, beet greens and the warm salad dressing. Serve with feta cheese crumbles on top.
