Roasting Hard-to-peel Winter Squash

  • 1 winter squash (acorn, buttercup, butternut, etc.)

  • 2 tablespoons butter or olive oil

  • salt & ground pepper, to taste

  • maple syrup or brown sugar (optional)

  • 1 garlic clove, minced (optional)

Preheat oven to 400 degrees. Cut the squash in half and scrape out the seeds and strings.

In each half, put some butter, salt, pepper, sweetener and garlic, as desired.

Place on a baking sheet, open side up and bake until tender, about 1 hour. Serve.
