Sautéed Summer Squash or Zucchini

INGREDIENTS

  • 2 lbs. summer squash or zucchini

  • 3-4 tablespoons olive oil or butter

  • salt, to taste

  • freshly ground black pepper, to taste

  • 1 clove garlic, minced

  • fresh parsley, mint or basil leaves, minced to garnish


Cut the squash into 1/4 inch thick slices. Place butter or oil and garlic in a large skillet and heat over medium-high.


When its hot, add the squash, sprinkle with salt and pepper and raise the heat to high. Cook, stirring occasionally, until the squash becomes tender and begins to brown, about 15 minutes. Garnish and serve hot.
