2 tablespoons olive oil
3-4 peppers (green, red, yellow), cut into thin strips
1 cup onion, thinly sliced
salt & pepper, to taste
2 teaspoons balsamic, sherry or other good vinegar
1 teaspoon fresh thyme leaves
1/4 cup fresh parsley or basil, chopped
Place oil in a large skillet, turn the heat to medium high and one minute later, add the peppers and onions. Cook, stirring occasionally, until tender and lightly browned, at least 15 minutes.
Season with salt & pepper and thyme. Stir in the vinegar, turn the heat to low and cook for another 2 minutes.
Stir in the parsley or basil and serve.
