1 lb. cucumbers, thinly sliced
2 teaspoons salt
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon sesame seeds
2 tablespoons korean red pepper powder
1 teaspoon sugar
1 green onion, thinly sliced
1 garlic clove, minced
In a colander, toss the thinly sliced cucumbers with the salt and allow to drain in the sink for around one hour. Toss them around to shake off as much excess liquid as possible.
In a large bowl, combine the vinegar, oil, sesame seeds, korean red pepper powder, sugar, green onion and garlic. Add the cucumbers and toss to coat.
Cover and chill before serving.
