1/2 lb. fresh spinach, chopped
1-1/3 cup whipping cream
1 cup asiago cheese, shredded (or romano or parmesan)
1 tablespoon red pepper diced
1 tablespoon basil
1 tablespoon sherry
1/4 teaspoon black pepper
Preheat oven to 325 degrees.
Mix all the ingredients together. (You can wilt the spinach some by salting it, then rinsing it and squeezing it out) Spoon into greased muffin tins and bake 20-30 minutes, until slightly browned.
Cool slightly and use a rubber spatula to scoop out of the tins.
