Sweet-and-Sour Pumpkin


Prep time: 5 min   |    Cook time: 45 min   |   Ready In: 50 min

INGREDIENTS

  • 2 tablespoons fresh mint, minced (or 1 tablespoon dried mint)

  • 1 pumpkin (3lb.), peeled, seeded and cut into 1 inch cubes

  • 1/4 cup water

  • 1 medium onion, chopped

  • 3 tablespoons cider or rice wine vinegar

  • 2 tablespoons brown sugar

  • salt & pepper, to taste


Preheat oven to 350 degrees.If you have fresh mint, reserve a bit for use as a garnish. Then, combine all ingredients in a 2-inch deep baking dish. Toss to mix, cover (use aluminum foil) and bake for 30 minutes.


Remove from oven and uncover. If the mixture seems dry, add a bit more water, recover and return to oven. If it seems too watery, return to the oven uncovered. Continue to bake until the pumpkin is tender, 15-30 minutes.


Serve with fresh mint for garnish.
