1 lb. cucumbers, thinly sliced
2 teaspoons salt
1/4 cup rice vinegar
1-1/2 tablespoon sugar
1 tablespoon sesame seeds, toasted
In a colander, toss the thinly sliced cucumbers with the salt and allow to drain in the sink for around one hour. Toss them around to shake off as much excess liquid as possible. In a medium bowl, combine the vinegar, sugar, sesame seeds. Add the cucumbers and toss to coat. Cover and chill before serving.
The smoothest flavour emerges after 2-3 days.
