rice paper sheets (18 sheets)
1 bunch of chard, stems removed & thinly sliced
1 bunch of basil, sliced
2 avocados, sliced
2 carrots, cut into matchsticks
1 cucumber, cut into matchsticks
Fill a large bowl with warm water. Using both hands, dip the rice paper for a few seconds to moisten the entire sheet. Carefully lay the rice paper flat on a cutting board. Layer the vegetables in the bottom third of the rice paper. Tightly fold the bottom edge over the fillings and roll it bit, then fold the sides in and roll the rice wrapper to the end. This takes some practice!
Repeat with the remaining rice paper and fillings.
Serve rolls with a dipping sauce of your choice: salad dressing, hoisin sauce, soy sauce, etc.
