Tomato-Zucchini Bake

  • 1 lb. sliced zucchini

  • 1-1/2 cups corn kernels

  • 1-1/4 lbs. sliced tomatoes

  • 1/2 cup panko

  • 1/4 cup finely grated parmesan

Preheat oven to 400 degrees.Grease a 2 quart shallow baking dish.

In this baking dish, alternately layer sliced zucchini, corn kernels and sliced tomatoes. Combine panko and parmesan, and sprinkle on top.

Bake, uncovered for 30 minutes of until the top is golden brown. Cover with foil and bake for 10-15 minutes more. Serve immediately.
