Veggie Bowl with Thai Coconut Lime Design

INGREDIENTS


The Dressing:

  • juice of 1 lime

  • 2-1/2 tablespoons fish sauce

  • 1/3 cups coconut milk

  • 1 tablespoon brown sugar

  • zest of one lime

  • 2 tablespoons fresh lemongrass, finely chopped

  • 1/2 hot pepper, seeded and minced

  • 1 garlic clove, minced

  • 2 tablespoons cilantro, finely chopped

  • 1 tablespoon mint, finely chopped


The Salad:

  • 1-1/2 cups cooked rice

  • 2 cucumbers

  • 4 large radish

  • 4 hakurei turnip

  • 1-2 carrots

  • 1 cup green onions

  • 1/4 cup cilantro, roughly chopped

  • 1/4 cup mint, roughly chopped


Thinly slice the cucumber, radish, turnip, carrots, green onions. Mix together veggies, rice and herbs. Top with the prepared salad dressing and enjoy!
