1 teaspoon olive oil
3-1/2 cups zucchini, cut into cubes
1 cup corn kernels
1 tablespoon cilantro, minced
1 teaspoon lime juice, freshly squeezed
1/4 teaspoon salt
1/8 teaspoon pepper
Heat oil in a large skillet over medium-high heat. Add zucchini and corn. Cook, stirring occasionally for 7-8 minutes or until zucchini is crisp-tender. Remove from heat and stir the remaining ingredients.
